Happy Friday it’s time to relax & kick your shoes off, hopefully you”ll get to do some shopping, finish reading that book, or looking up an old friend(s) you haven’t seen in years. Today’s special treat is Caramel Apple bars with a crunchy topping. The taste reminds me of home being in my mom’s kitchen baking up sweet goodness after a long week of school. Besides, cutting the bars in the traditional shapes of squares I decided to cut the bars using a circle cookie cutter to give it a more festive look. I went to Michaels Art & Craft store, brought colorful chinese take-out containers to hand them out as gifts, if you do not live near a Michaels, try Jo-Ann instead.
Yield: 16 ( depending how you cut the bars)
2/3 c. butter 2 c. grated, peeled apple (4 Lg.)
3/4 c. light brown sugar 1 1/4 t. cinnamon
1 t. vanilla 1/2 c. caramel sundae
1 3/4 c. quick- cooking rolled oats 3/4 c. chopped peanuts
1 1/2 c. flour
1. Preheat oven to 350 F. Greased a 13×9 inch rectangular pan
2. In a bowl, combine butter, brown sugar, & vanilla. using an electric mixer on medium-speed, beat until blended. Add flour & cinnamon. Blend on low speed until crumbly. Set aside. reserve 1 1/2 c. for topping. Press the remainder into prepared pan. Scatter the apples evenly on crust. Sprinkle the reserve crumb topping, drizzle caramel sauce evenly, sprinkle peanuts on top.
3. Bake for 25-30 minutes, until top is set & golden brown. Let cool completely in pan on rack, cut into desired bars. – Happy Baking
