A yogurt parfait contains some of breakfast major staples: vanilla yogurt, granola, strawberries, & blueberries. A great thing is that a parfait is versatile. You can make it however you chose! It has become one of breakfast most delicious meals, & the best part it’s easy to prepare.

Use a vanilla low-fat yogurt as your base, use fresh fruits for the source of sweetness. Start with a tall glass or preferably a wine glass, layering spoonfuls of yogurt, fruit, &  granola. Chose any type of fruit: any berries, peaches, kiwi, bananas, mangos, pineapples, shredded coconut, & oranges. For breakfast on Wednesday after my cardio workout, I made a granola yogurt parfait using  homemade  granola instead a store-brought granola I made it with rolled oats, honey, pecans, spices, & lots of love. This  granola can also be use as a topping for frozen yogurt. Enjoy!

Granola Parfait Yield: 8 people

2 c. old-fashioned rolled oats (not instant)     1/2 t. cinnamon

1/4 c. raw sunflower seeds ( not roasted)        1/4 t. fresh nutmeg

1/2 c.  coarsely chopped pecans                        1/4 t. kosher salt

1 1/2 T. butter, melted                                         1 t. vanilla

1/3 c. honey                                                            1/2 c. raisins

Garnish: 1 1/2 quarts fresh strawberries, stemmed and thinly sliced, save 8 perfect ones for the rim of each glass.

1. Preheat oven to 300 F. Lightly oil a baking sheet.

2. Combine the oats; sunflower seeds & pecans in a large bowl. Combine the melted butter, honey, cinnamon, nutmeg, salt & vanilla & pour over the oats. Stir thoroughly to combine, & spread evenly on baking sheet.

3. bake until golden brown, about 40 minutes, stirring every 15 minutes. Let cool, then stir in raisins. ( For your variety you can substitute your favorite nuts for pecans & raisins in the granola I actually used dried cranberries for      sweetness)

4. When ready to serve, place 1 T. granola mixture in each of 8 large wine glasses. Scoop about 2 T. of low-fat vanilla yogurt on top. Layer with strawberries over the yogurt. Repeat. Top with the remaining yogurt & sprinkle with granola mixture. Slice each reserved berry vertically down the middle& press each one onto the rim of each glass as a garnish.

Food Fact: Yogurt is an excellence source of protein, containing anywhere from 10-14 grams per 8 oz. serving. Add in granola to boost up the protein.
