Mini Desserts are popping up all over the place: graduation parties, recitals, rehearsal dinners, casting parties, celebrity partes, & etc. Mini desserts are bite-size hand-held treats that requires little or no baking. If you every decided to do own to do dessert table for friends or family here is one dessert that you can have on your table.
One of my favorite combination with chocolate is peanut butter, well actually dark chocolate instead of milk. I hope you enjoy this dessert it’s very easy to make, it’s light and creamy and requires less time in the kitchen!
Yield: 12 shooter glasses size: 4 x 1 1/2″ weight: 2-3 oz
1 1/2 c. finely crushed chocolate wafers or chocolate graham crackers
4 T. butter, melted
1 T. honey
1 pkg. 8 oz. cream cheese, softened
1/2 c. peanut butter
1 c. powdered sugar
3 T. milk
1 t. vanilla
1 container 8 oz. whipped topping or fresh made whipped cream
1/2 c. chocolate chips or 1/2 c, chocolate ice cream syrup
1/4 c. finely chopped peanuts
1. Stir together melted butter, honey, and crushed wafers in a mixing bowl. Fill each shooter glass with a heaping teaspoon of wafer mixture, about 1/2″ and pack down slightly.
2. Add a few chocolate chips or drizzle with chocolate syrup. Add some chopped peanuts on top of cookie crumbs.
3. Beat cream cheese and peanut butter until smooth. Add powdered sugar, milk, and vanilla. Mix together until well blended. Add a little more milk if needed to make creamy. Gently fold in whipped cream topping or whipped cream.
4. Carefully spoon the peanut butter mixture into the shooter glasses or use a pastry bag with a plain or open star tip. Garnish with chocolate shavings or drizzle with chocolate syrup and peanuts. Refrigerate a couple of hours before serving time. Enjoy!
