Everything goes better with chocolate right?……. Smooth, rich, luxrious….everyone knows that peanut butter and chocolate is a great combination. As many of you know I love peanut butter and chocolate, it’s one of my favorite combinations in the world of chocolate.
I love the creaminess of a good quality peanut butter like “Skippy” a childhood favorite of mine and probably for the most of you. Even though some people prefer “Jif” okay I’m not going to do a taste test, maybe for the future. But one thing we all can agree on is that we love CHOCOLATE! In the coming weeks I’m planning on doing a post on how to choose the right chocolate when baking and cooking.
Yes cooking for those of you who may not be aware. Chocolate is an art. Can you imagine life without chocolate…. there would be lot more crazy people running around. This recipe is easy to prepared that means less time in the kitchen and the best part no baking.
No Bake Peanut Butter Bars Yield: 24 bars
1 1/2 cups of finely chopped graham cracker crumbs, (abt 1 1/2 pkg.)
1 cup (2 sticks) butter, melted
2 1/2 c. confectioners’ sugar
1 cup peanut butter creamy or crunchy
1 cup chocolate chips
1. Spray a 9 x 13 baking pan with cooking spray. Process graham cracker cookies in a food processor, process until fine.
2. In a large mixing bowl using a large spoon or your hands combine graham cracker crumbs, butter, confectioners’ sugar, and peanut butter, stir until well combine. Spread the mixture in the prepared pan, chill the mixture in the refrigerator for approximately 10 minutes.
3. While peanut butter layer is chilling, melt the chips in the microwave or a double boiler method. Take the peanut butter layer out of the refrigerator, spread the chocolate over it using an offset spatula or a rubber spatula making sure you cover the top completely.
4. Cut bars into squares, return the pan back to refrigerator to chill for at least 1 hour. Serve and Enjoy!
