Happy Saturday Everyone. The weekend is finally here! As for me, I will be resting, do some more baking and spending time with my honey. This recipe that I’m sharing with you is very simple to make, matter fact it’s a no bake recipe. So you really don’t have to worry about staying in the kitchen all day. All you have to do is go to the supermarket and buy a box of your favorite shortbread round cookies; and make from scratch a strawberry creme-filling; along with other ingredients from your pantry.
This will only take 1 hour and 20 minutes to make, so you will still have time to get a manicure and pedicure, do the laundry, get a haircut or while your kids are playing soccer, you can enjoy these delicious cookies in the bleachers with a cup of coffee or zen tea.
Yield: 18 sandwich cookies
1 cup frozen (thawed) strawberries
2 cups confectioners’ sugar
1 t. lemon juice
2 oz. cream cheese, softened
1 T. unsalted butter, softened
36 round shortbread cookies
1. In a blender puree the strawberries. In a medium saucepan on medium-high, whisk pureed strawberries, 1/4 cup of confectioners sugar, and lemon juice, whisk until thickened and reduced by half, about 10 minutes.
2. In a mixing bowl, on medium speed beat together butter and cream cheese until blended. Add in 1 3/4 cup confectioners sugar into strawberry mixture blend until smooth, put the mixture into a plastic container and cover with plastic wrap for 1 hour to chill.
3. Spread 1 T. strawberry mixture on 18 shortbread cookies. Top each with another cookie. Chill until ready to serve.
